Long Jing Tea is a variation of green tea and like other green tea, it is prepared from unfermented leaves which are subjected to withering then panfried/steamed prior to rolling and drying.
Green tea has many beneficial compounds that brought about a range of pharmacological implications on human health. These compounds comprise of polyphenols (primarily catechins), minerals and vitamins.
