Long Jing Tea is a variation of green tea and like other green tea, it is prepared from unfermented leaves which are subjected to withering then panfried/steamed prior to rolling and drying.
Green tea has many beneficial compounds that brought about a range of pharmacological implications on human health. These compounds comprise of polyphenols (primarily catechins), minerals and vitamins. Catechins are found in many scientific studies to display antimutagenic, anti-diabetic, anti-inflammatory, anti-bacterial and anti-viral properties. Some human studies suggest that green tea may contribute to the reduced risk of cardiovascular disease and cancer1.
