10g dried Turkey Tail Mushroom (rinsed and soaked)
4 cups water
1 medium carrot, chopped
1 celery stalk, chopped
1 small potato or sweet potato, diced
1 small onion, diced
2 garlic cloves, minced
1 tbsp olive oil
Salt and pepper to taste
Fresh herbs (thyme, parsley, or rosemary) for garnish
In a pot, add Turkey Tail Mushroom and water. Bring to a boil, then simmer for 1 hour to extract the benefits.
Remove Turkey Tail pieces and discard (they are too tough to eat).
In a separate pan, sauté onion and garlic in olive oil until fragrant. Add chopped vegetables and stir for 2–3 minutes.
Pour the Turkey Tail infusion into the pan with the vegetables. Simmer for 20–30 minutes or until vegetables are tender.
Season with salt and pepper. Garnish with fresh herbs before serving.
