Double-boiled Black Chicken Consommé with opiopogon root, white tremella mushroom and Rock Melon

Ingredients (serves four)

1 Black Chicken (around 1.2kg)
225g Lean meat
20 pieces Opiopogon Root
11g White Tremella Mushroom
10 Apricot Kernals (North)
10 Apricot Kernels (South)
1 Tangerine Peel
225g Rock Melon (both red and white varieties)
Salt (to taste)
Water (enough to cover all ingredients)
 

Directions

● After cleaning the chicken and removing the skin, slice and dice it into pieces of desired portions.

● Slice and dice lean meat into desired portions.

● Place all the ingredients into a pot and stew for two-and-a-half hours. Serve.
